Today is Georgian National Day - Georgia the republic,
not Georgia the state. Since a portion of my family hails from not far
from that area, I've always been interested in the cuisine of the region.
Tonight's theme, then, a tribute to the republic with a menu of my
interpretations of traditional Georgian cuisine.
Hoy es el día nacional de Georgia - Georgia la
república, no Georgia el estado de EE.UU. Como una parte de mi familia
procede de cerca de esa zona, siempre tuve interés por la cocina de la
región. El tema de ésta noche, entonces, es un tributo a ésta república
con un menú de mi interpretación de la cocina georgiana tradicional.

"The first course was brilliant and it was easy to see from
the murmurs that everyone did. Nice contrasts of flavors and the
cheese was very satisfying. On the plate it looked just fine and as
if it was meant to be. Yes, I missed the topping of the eggplant
dish and it was a little large, but wow what flavors. Shocking by
contrast to Argie fare. Just struggled to reach the bottom as I
didn’t want you to think it wasn’t well received. Delish. Soup just
as described, and like an oasis in the desert, so few soups here.
Make more soups! ... So much like home that apple dessert. Made me
want to yell, “do you see this dish, this is how you do it”, but
everyone else was in shock and slurping it up so who could I
