Sixty years ago, on June 2, 1946, the various provinces of Italy voted to end the monarchy and become a democratically elected republic. I have created a menu that celebrates some of my favorite Italian ingredients for Republic Day in Italy.

From some of the guests:

"The risotto entry was great! ... Everyone there left like it was Babbette´s Feast so I think the evening was definitely a success." - V.H.

"The risotto cake was a masterstroke, running up against the lemon something soup from my last dine as a standout of execution and yummy flavors... The pork dish very satisfying, you probably split the hair on picante. Just spicy enough for me and hard to imagine too much for those who pale before seasoning. Nicely plated also... You know my thoughts on dessert. E... claimed she was too full for another bite, until she took a bite of the cookie which I believe she finished. Sinful." M.F.

"It was a nice evening the one we spent at your place last Friday. Our table was great fun with people related to our activities whom we met there just by chance." M.M.
