I’ve said many a time that my “themes” for our Casa
SaltShaker are often loosely if at all based in the world of food. This
weekend was a perfect example. It was the 40th anniversary of the legal
death of Dr. James Bedford, a Massachusetts psychologist. What was
important about Dr. J’s death is that on that same day he became the first
adult human being to be (intentionally) cryogencially preserved for the
cited purpose of future resurrection. Now, there were many ways I could
have gone with that theme - an all frozen dinner perhaps? But I extended
the concept and decided on “methods of preservation” as a theme. Each dish
had to have some element in it that was preserved in some fashion…
"Thank you for having us. You are a great host who can create an
intimate and enjoyable evening. Everybody felt at home and by the end it
seemed that we all have known each other for a long time. I loved the
fennel, the orange ice cream and the watermelon preserve.... oh! and I
forgot to mention, the lasagna was superb!!! I already read your recipes
and comments about the evening, didn't know escabeche comes from the
Arab. I hope to visit you again soon. Your passion for food is

were with the fennel escabeche, the fish/eggplant lasagna and the ice

dishes – too busy enjoying the conversations and drinking wine.... The
starter Escabeche and the beef dish stand out as fond memories....
