I’d been wanting to offer a middle eastern dinner of some sort for awhile, and Independence Day in Morocco seemed the perfect opportunity. I like the cuisine from that country in particular, because for me it embodies a seamless blend of Middle Eastern, African, and French influences.

The only feedback I can think of is that we probably would have liked a few more minutes between each course. I´m not saying that we felt "rushed" exactly, but maybe another half hour spread over the evening would have made for a more leisurely pace?
