There was nothing in particular about the weekend that inspired a
Central American themed dinner, simply whim. I’ve been exploring some of
the cuisine from the various countries that make up “Central America” (now
seven countries rather than the “original” five, Panama and Belize having
been added in later on). The fact that the short-lived Federal Republic
had five member states made it easy to fit into a five course tasting
menu, you know?

"How nice of you to ask this question. I actually thought about it on
the way home and I could not think of one thing you could do to make the
experience better. I imagine that your evenings either "work" like ours
did or do not work because of personalities or language barriers but that
is all part of the fun. A little more of you both interacting with the
group would be nice but I know that is impossible because you are very
busy in that kitchen. Your food was well thought out and very tasty
compared to the food we had been having in BA. It was a great overall

"i had a great time too. thanks so much for doing what you do. so this
is kind of picky but something i never considered until my sister married
a music expert. now whenever i go to her home, the home is always filled
with the most perfect, non-obtrusive, approriate music for any particular
setting. just like the table setting, lights, wine pairings, pacing of the
dinner, and seating arrangement make for better dinner conversation and
atmosphere, i now have a greater understanding of how music also is also
extremely important in setting the mood. i think most dinner parties in
the u.s., the host can have a great dinner party but terrible music
choices. it´s an overlooked element. i think you could do with a much
better stereo system and music selection to better the experience. some
bossa nova jazz or other local jazz would have been perfect. in any case,
just my two cents. loved being a part of your experience." - M.H.
